I am feeling sort of sickly and made chicken noodle soup last night for the first time ever. And? It is awesome. This soup is so easy to make; I have no idea why I’ve never made it before.
I don’t feel like writing it out or looking up measurements, but it’s sort of like this one from Alton Brown, but I added the juice of two lemons, about half of a chopped up rotisserie chicken, carrots, and mushrooms (because I had them.) Oh, and LOTS of black pepper. Sautee onion, carrots, and celery in butter/oil until soft. Add broth, chicken, pasta, mushrooms, and lemon juice. Season with whatever seems right (I used garlic salt, cumin, pepper, onion powder, oregano, and probably something else.) Soup is finished when pasta is cooked.
As for proportions, use your judgment. I just eyeball everything.
